◆ Overview of the Award

Sustainable gastronomy refers to a concept of sustainable food culture that is passed down to future generations while taking environmental, social, and cultural considerations into account. It is positioned by the United Nations as an important initiative toward achieving the SDGs. Across the entire food value chain—from production and distribution to cooking and consumption—key perspectives include conservation of natural resources and ecosystems, traceability, reduction of food loss, utilization of local resources, and preservation of food culture.

This Award aims to spotlight initiatives that put these principles into action. Rather than focusing solely on the scale of results, it evaluates and visualizes the underlying philosophy and processes behind the initiatives, with the goal of expanding sustainable gastronomy throughout society. Judging is conducted from three perspectives—innovation, social impact, and contribution to food culture—by experts active across diverse fields including research, business, on-site practice, and policy within the food, agriculture, and gastronomy sectors.

In particular, the Award focused on its advanced approach combining agriculture, decarbonization, and carbon credit creation, as well as the social impact generated through business implementation.

In August 2024, Green Carbon was selected for the Tokyo Metropolitan Government’s “Carbon Credit Creation Promotion Program for Absorption and Removal-Based Credits.” ※2 The company has since launched demonstration projects aimed at establishing a carbon absorption model derived from agriculture within Tokyo.Specifically, Green Carbon has announced results related to:Carbon storage and yield surveys for biochar J-Credit creation within Tokyo,Carbon storage and yield surveys through carbon farming,Data collection for establishing J-Credit methodologies.

In addition, the company is promoting carbon farming (green manure) demonstration projects nationwide in collaboration with universities and private companies.

Internationally, particularly in Vietnam, Green Carbon is advancing carbon farming (farmland carbon sequestration) projects in partnership with SEARCA ※3, an organization with deep expertise in agricultural development in Southeast Asia, and is working toward carbon credit creation.

These comprehensive initiatives were highly evaluated, leading to Green Carbon being honored as an advanced case contributing to the realization of sustainable food culture.

※1: Carbon Farming
Carbon farming is a collective term for agricultural practices that promote carbon storage in farmland soil. Through reducing chemical fertilizers, increasing organic matter inputs, introducing intercropping and crop rotation, and practicing no-till or minimum-till farming, carbon dioxide from the atmosphere is sequestered and stored in the soil.

These practices are expected to deliver multiple benefits, including greenhouse gas reduction, improved soil fertility, enhanced water retention capacity, increased biodiversity, and improved agricultural productivity and environmental sustainability.
